Peanut Butter Banana Oat Bites

Peanut butter and banana is one of my favorite flavor combinations, especially for an afternoon snack. I love a warm peanut butter and banana toast, but sometimes that isn’t the most practical. So I whipped up these peanut butter and banana oat bites to fill my snack craving on the go. With minimally processed ingredients and just a hint of added sweetness from honey, these oat bites are a delicious energy boost and a healthier alternative to a lot store bought snack bars. Read on for the simple instructions to make them.

Mix

  1. In a medium bowl, mix together old fashioned rolled oats, baking soda, salt, and cinnamon and set aside.

  2. In a large microwave safe bowl, heat peanut butter and honey in the microwave for 15-30 seconds until the peanut butter is melted enough to easily stir. Mix to combine.

  3. Add a mashed ripe banana to the peanut butter and honey and mix until smooth. Add 2 egg whites and mix again until fully combined.

  4. Add the dry ingredients to the wet ingredients and stir until fully combined.

Cover and refrigerate for about 30 minutes to let the mixture set up a little bit to make it easier to roll into balls.

Form into Balls

Line a baking sheet with parchment paper or a silicone baking mat.

Once chilled, roll the oat mixture into about golf ball (or slightly smaller) sized balls and place on the prepared baking sheet at least 1 inch apart. You should have around 12-14 balls. It is okay if the dough is still a little sticky.

Bake

Bake at 350°F for 12-14 minutes until the edges are brown and the centers are set. Allow the oat bites to cool on the baking sheet for at least 10 minutes before removing.

Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
