Hot Honey Granola

Looking for a healthy snack but can’t decide between sweet and savory? Like a little kick of spice? Then this Hot Honey Granola is the perfect choice for you! Your favorite nuts and seeds are mixed with oats, hot honey, and a little bit of olive oil and baked until the nuts are roasted and the honey binds everything together. A great snack for on the go or when you need a little energy pick-me-up.

Mix the Dry Ingredients

For this granola, you’ll need the following dry ingredients:

  • 1 and 1/2 cups of old fashioned rolled oats

  • 3/4 cup of your choice of nuts (I used almonds, cashews, and walnuts), roughly chopped

  • 1/4 cup of your choice of seeds (I used pumpkin seeds)

  • 1/4 teaspoon of salt

Mix together all of the dry ingredients in a large bowl.

Add the Wet Ingredients

Drizzle 1/4 cup olive oil and 1/3 cup hot honey (I used Mike’s Hot Honey brand) over the dry ingredients and mix until everything is evenly coated.

Bake the Granola

Line a baking sheet with parchment paper. Spread the granola mixture in an even layer over the parchment, making sure there are no big gaps.

Bake at 350°F for 10 minutes. Stir the mixture and spread it out again. Bake for another 10-15 minutes until the nuts have roasted and there is no noticeable liquid in the pan.

Allow the granola to cool completely in the pan. Then break it up into your desired sized pieces and enjoy!

Store leftovers in an airtight container at room temperature for up to 1 week.

Ingredients

  • 3/4 cup total of mixed nuts, roughly chopped (I used almonds, walnuts, and cashews)
  • 1/4 cup seeds (I used all pumpkin seeds)
  • 1/4 tsp salt
  • 1/4 cup olive oil
  • 1/3 cup hot honey

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, nuts, seeds, and salt. Drizzle with the olive oil and hot honey and mix until everything is coated.
  3. Spread the mixture out on the prepared baking sheet, making sure to not leave any big gaps between pieces.
  4. Bake for 10 minutes. Stir the granola and spread it back out into a single layer, once again making sure to not leave any gaps. Bake for another 10-15 minutes until nuts are roasted and there is no noticeable liquid in the pan.
  5. Allow the granola to cool completely in the pan before breaking up into pieces. Store leftovers in an airtight container at room temperature for 1 week.
