Honey Walnut Cookie Bars

Cookie bars have to be one of the easiest desserts to make. All you have to do to prepare them is mix up the dough and press it into a baking pan. No chilling or portioning out cookie dough balls necessary. These Honey Walnut Cookie Bars take less than a half an hour to make and don’t even need an electric mixer. And the sweet and nutty flavor combination is one of my favorites! Read on to see how to make this quick and easy sweet treat.

Mix the Dough

The only equipment you need to mix the cookie bar dough is two bowls, a whisk, and a sturdy spoon or spatula. You’ll also need the following ingredients when using a 9x13 inch pan:

  • 2 cups all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/4 tsp salt

  • 1 cup unsalted butter, melted and slightly cooled

  • 3/4 cup brown sugar

  • 1/4 cup honey

  • 1 egg, room temperature

  • 1 tsp vanilla extract

  • 1/2 cup chopped walnuts

Start by whisking the flour, baking soda, cinnamon, and salt together in a medium bowl. Set this aside for now. Then, in a large bowl, whisk together the melted butter, brown sugar, and honey until smooth. Add the egg and vanilla and whisk or stir until fully combined.

Add the dry ingredients to the wet ingredients and mix with a wooden spoon or rubber spatula until just combined. This will be a thick dough. Fold in the chopped walnuts.

Line a 9x13 inch baking pan with parchment paper, leaving some overhanging the edge for easy removal. Evenly spread the dough into the prepared pan, making sure to press it all the way to the corners like in the image below.

Bake

Bake the cookie bar at 350°F for 10-12 minutes until the sides begin to brown. Allow it to cool in the pan for at least 10 minutes before removing.

Sweet Honey Icing

Make the icing by whisking together powdered sugar, honey, vanilla, and 1 tablespoon of milk or cream until smooth. If the icing is too thick, add 1 additional tablespoon of milk or cream. Spread the icing over the cookie bar.

Store leftovers covered at room temperature or in the refrigerator for 3-5 days.

  8. Make the glaze by whisking together powdered sugar, honey, vanilla, and 1 tablespoon of milk or cream until smooth. If the glaze is too thick, add 1 additional tablespoon of milk or cream.
  9. Spread the glaze over the cookie bar, cut, and enjoy!
  10. Store leftovers covered at room temperature or in the refrigerator for 3-5 days.
