Banana Chocolate Chip Donuts
Banana and chocolate are such a great flavor combination. While you can’t go wrong with chocolate chip banana bread, I wanted to make something a little different. I haven’t had a banana donut before so I figured I would make my own! These baked donuts are made with fresh banana and are full of mini chocolate chips and topped with a chocolate and peanut butter frosting. They just might be my new favorite way to enjoy an old favorite flavor combo.
Make the Donut Batter
Baked donut batter is super simple to prepare. Start by whisking together the dry ingredients - flour, baking powder, and salt - in a medium bowl. In a large bowl, whisk together brown sugar and melted butter until smooth. Add mashed ripe banana, eggs, milk, and vanilla extract and whisk until fully combined. Add the dry ingredients to the wet ingredients and stir until just combined. Finally, fold in the mini chocolate chips.
Fill the Donut Pans
Brush donut pans with a generous amount of softened butter. This will make removing them much easier. Transfer the donut batter to a piping bag and cut off the tip. Pipe the batter into the donut pans and smooth out any uneven spots.
Bake the Donuts
Bake the donuts at 350°F for 13-15 minutes until the donuts are golden brown around the edges and spring back when you gently press on them. Allow the donuts to cool in the pan for at least 5 minutes before transferring to a wire rack to cool completely.
Make the Frosting
You thought the batter was simple to make? The frosting is even easier! Simply melt chocolate chips and peanut butter in the microwave on 50% power, stopping to stir every 30 seconds. Once its fully melted and smooth it’s ready.
Frost the Donuts
There are a couple of ways you can frost the donuts. One way is by dipping the tops of the donuts directly into the frosting. Another is to use an offset spatula to spread the frosting on the donuts. I did a bit of both - dipped to coat the donuts and then used the back of a spoon to make some swirl texture. The frosting will set as it cools. Put them in the refrigerator if you want them to set faster.
Store leftover donuts in an airtight container in the refrigerator for up to 5 days.
